Hiestand House Egg Souffle
BF Hiestand House B&B • Marietta, PA
Ingredients:
• 4 slices Canadian Bacon
• 6 large eggs
• 1 tsp. Dijon mustard
• 1/2 C. plain yogurt
• 1 1/2 C. shredded cheddar cheese, divided
• 1 1/2 tsp. Mrs. Dash seasoning, divided
Directions:
Preheat oven to 375 degrees. Spray four ramekins with
vegetable spray. Place a slice of Canadian bacon in each
ramekin. In medium bowl, beat eggs, mustard and yogurt.
Stir in 1/2 C. of cheese and 1 tsp. spice blend. Spoon egg mixture
over Canadian bacon. Sprinkle remaining cheese and spice
blend over egg mixture. Place ramekins on a baking sheet and
bake 25-30 minutes until golden and set. Makes four servings.

Cranberry Sausage Quiche
Belle Hearth Bed and Breakfast • Waynesboro, VA             

Ingredients:
• 1 unbaked 9” frozen deep dish pie crust
• 8 oz. Bulk sausage
• ¼ cup spring onion
• ½ cup dried cranberries
• 1 ½ cups grated cheese (Monterey Jack or Cheddar)
• 3 eggs
• 1 ½ cup of Half & Half
• Dried sage leaves and parsley flakes
• Serves 6
Directions:
Preheat oven to 400F
Let pie crust stand at room temperature for 10 minutes, then
prick bottom and sides
Bake crust for 7-9 minutes, remove and cool; reduce oven to

Brown sausage in skillet, then drain and cool
Sprinkle cheese on bottom of pie crust, then top with crumbled
sausage, onion and cranberries
Beat eggs and half and half with whisk; pour over pie crust
Top crust with crumbled sage leaves and parsley flakes to taste
Bake for 40-45 minutes until quiche is puffy and golden brown.
Cool for 10 minutes before cutting. Garnish with halved cherry
tomatoes.
